Pecan Bars
(made by Mary Longfellow and fully approved by the very discerning Tuesday 9:30 class)
"as good as pecan pie"
1 cup butter, softened 3/4 cup
granulated sugar
2 cups all-purpose flour 1 cup light corn syrup
3/4 cup packed brown sugar 1 teaspoon vanilla
5 eggs 2 1/2 cups pecan halves
Heat oven to 350 degrees. Mix butter, flour and brown sugar together. Pat dough into 13x9x2-inch pan. Bake for 12 minutes.
Beat eggs. Add remaining ingredients; mix thoroughly. Pour over baked crust. Bake for 15 minutes. Lower heat to 275 degrees and continue baking for 30 minutes more or until set. Cool; cut into bars.
Freezes well.
Yield: 36 (2x2-inch) bars.
